Ingredients: 8 fresh mint leaves
1 tablespoon simple syrup
1 tablespoon fresh lime juice
2 fl oz (60 ml) white rum (Bacardi)
1/2 fl oz (15 ml) dark rum (Bacardi)
Put the mint, syrup and lime juice in a tall cocktail glass.
. Pound lighty (muddle) with the end of a wooden spoon.
. Fill the glass with ice and then add the white rum.
. Next, add the club soda just shy of the top.
. To finish, add a float of dark rum.
